Nothing should be running on the laptop when it's closed and sleeping.
Sleeping is just a suggestion. Any apps that are currently running can sometimes override the sleep functionality. Or maybe the laptop never actually entered Sleep Mode.
See if activating "Sleep" from the Apple menu makes any difference.
When I was helping a co-worker figure out a similar issue with their personal laptop, I discovered it appeared to be related to iCloud syncing of photos overnight.
You can try running the following Terminal command to view whether the laptop actually enters sleep mode and what triggers it to wake up:
pmset -g log | grep -iE 'Sleep |Wake '
FYI, there are two & only two spaces after "Sleep " & "Wake " in that command. It would be best to just copy & paste it into the Terminal since those two & only two spaces are critical to properly filter out the most relevant items in the log, otherwise you will be either overwhelmed with unnecessary & confusing entries, or you will not receive the proper ones at all.
I avoid leaving the power adapter charged in because that accelerates battery ageing.
By default recent versions of macOS now have Optimized Charging enabled which will exercise the Battery when the laptop is on the power adapter. Here is an Apple article regarding Optimized Charging:
