In the Contacts app I found the names also entered in the last name field, so the contact is shown with a double name.

You have to use something. Are your contacts just on the phone? Contacts have been managed by some service. When you go to Contacts, in the upper left corner it should say Lists.
If you tap on that, what do you see on the page that appears? You can also have other lists there, such as email accounts that allow the management of contacts.

I have not witnessed this behavior on my iPhone 16 Pro Max. What are you using to manage your contacts, iCloud, a different mail account? How you address it can depend on how you are managing them.
I don't use any app to manage my contacts.
There is no iOS 18.5.1. Also, I just tested my iCloud contacts and was able to edit a poster for a contact. Finally, this is a user to user support forum and Apple does not participate here. They will not see the comment you made about fixing.
